– sebab: tindakan organisma perosak makanan, tindak balas enzim dalam makanan, atau keadaan dalam persekitaran.

-sumber utama transmisi mikroorganisma kpd manusia:
1) penyedia makanan
2) makanan tercemar – mengandungi bahan patogen yg menyebabkan penyakit.
